ABOUT RISING SPRING BILUOCHUN

As the last spells of coldness pass and the weather begins to warm up, Chinatown aunties and uncles would begin their annual Chinese vegetable growing season in their apartments. Using makeshift supplies, they nurture seedlings in takeout containers and line the window ledges with planters repurposed from discarded bowls. The springtime sight of Chinatown’s urban farms carries an essence of renewal similar to the spring harvest of Biluochun—a prized green tea grown in Jiangsu. 

On Dongting Mountain, where the tea grows, warm sun rays slowly melt away the ice on the mountainsides, coaxing the tea bushes to awaken from their winter slumber to produce a new harvest of Biluochun. The tea’s delicate, crisp, sweet, fresh taste is offset by a slight nuttiness—evoking the feeling of winter giving way to the rising spring.
